About Cambio Blanco Tequila

Crafted from 100% Blue Weber Agave, Cambio Blanco Tequila is a labor of love for founder and sommelier John des Rosier. Every step in the production process goes above and beyond: The agave piñas are roasted low and slow, drawing out rich, honeyed flavors. Then, they use a traditional Tahona stone wheel to extract the juice. The juice is then fermented at very low temperatures using wine yeast in American white oak and Mexican pine-lined tanks. This two-week process allows for total control over flavor development. Finally, the tequila rests in French oak wine barrels, making for a truly unique blanco expression. It's fruity and rich with hints of butterscotch, orange peel, guava, and peach - and a slight mineral undertone to keep you guessing. The tequila is bottled at 92 proof.

Although tequila has developed a bad reputation, there's more to the spirit than just shots on a Saturday night.

This traditional Mexican drink origins in the state of Jalisco when according to a local legend, lightning struck an agave cactus before the Nahua tribe drank its warm nectar. Behold, tequila.

Legally, tequila has to be made of 51% of Blue agave around the Jalisco region in Mexico. There are different types of tequila according to age - from the youngest representatives, blanco, reposado, and añejo, to the oldest extra añejo.
