With Isolation Proof Gin, everything happens locally: the raw ingredients are sourced within the New York State, including the base spirit which is made from 100% up-cycled whey—a dairy by-product that would otherwise be thrown away. Once the whey is converted to sugars and fermented, the spirit is distilled with 7 organic locally-sourced botanicals: juniper, coriander, cassia bark, angelica root, licorice root, orange peel, and cubeb. Add to that the local mineral-rich spring water and the temperature fluctuations that occur in the uninsulated barn, and what you get is a characteristic gin that reflects the time, place, and conditions under which it was made.

About Gin

Initially made for medicinal purposes, gin gets most of its flavor from the juniper berries added after the distillation process. It sure has come a long way from the Middle Ages, with the introduction of new botanicals, fruits, and spices, bringing it closer to people of all flavor varieties.
Clear. The nose entices with white flowers, green watermelon rind, jasmine, grassy pastures, fertile earth, peppery spice, cardamom, and stone fruit. The palate is silky and rounded, with notes of black walnut, fresh-cut fennel, orange rind, bitter herbs, and tropical fruit.
