"Mestizo" is a word of Latin origin that was used by the Spanish in reference to the mixing of indigenous Mexicans and Europeans. It's a suitable name for a mezcal since the famous Mexican spirit combines the ancient indigenous drink known as "mexcalli" with the alambique distillation methods that were brought to Mexico from Spain.
Mestizo mezcal is produced in the village of Santiago Matatlán using artisanal methods that have been in use for more than 4 centuries. The agaves take between 8 and 10 years to fully mature, which is when the piñas (hearts) of the plants are harvested by the jimadores using machetes. The piñas are then baked in a stone-lined fire pit that is covered with a carpet made from plant fibers and maguey leaves, and a layer of dirt. After 3 to 5 days of cooking, the caramelized piñas are chopped and ground in a horse-pulled mill. Water is added to the roasted bagazo that is left to ferment naturally for 8 to 15 days. Finally, the liquid is distilled twice using an alambique (copper pot) still.
Thus produced, the handcrafted mezcal is distinctive, complex, and aromatic. Currently, there are 3 Mestizo mezcals in their lineup: the unaged Joven, the Reposado, and the Añejo. Crafted with 100% espadin agave, the Reposado spends 8 months in new American white oak casks, resulting in a balanced expression with floral and vanilla notes and hints of oak. Bottled at 80 proof, the Reposado has won several awards.

About Mezcal
Mezcal is a distilled spirit made from roasted agave plants between two days and two weeks, which gives it a distinct smokey flavor. What scotch is for whisk(e)y, mezcal is for tequila.
It can be made from different types of agave in different parts of Mexico, but most of it (60%) comes from the state of Oaxaca. Mezcal offers a large diversity of flavor profiles and ranges between 40 and 55% ABV.
The nose is fresh and fruity with citrus, cooked agave, mineral, floral, and smoke aromas. The palate is equally fruity with a pleasant sweetness and honey, vanilla, pepper, smoke, and oak notes. The finish is smooth with lingering fruit, honey, and spice.
