About Mezcal de Leyendas Maguey Verde San Luis Potosi

Mezcal de Leyendas is focused on bringing artisanal mezcals using rare and unique agaves from different regions within Mexico. Instead of focusing on one particular type, their aim is to use the most prevalent agaves from each region allowing them to guide the consumer across the entire DO of mezcal. These are sourced from diverse regions, highlighting the local terroir as well as showcasing the skills of local Maestros Mezcaleros. Each region ― be it Durango, Guerrero, Oaxaca, Puebla, or San Luis Potosi ― features one master producer of mezcal.

But they do far more than just that. In 2005 they opened the first Mexico City establishment that only sells artisanal mezcal helping spark the boom we see in mezcal today. They organize festivals and work to help the industry grow, educate, and take part in projects that deal with sustainability and fair trade ― both crucial aspects of securing a bright future for the famous Mexican spirits.

Leyenda San Luis Potosi is made with agave Salmiana, which is one of the few agaves tough enough to grow in the rocky and arid lands of the central Potosino plateau. This wild agave, commonly known as verde, is endemic to the San Luis Potosi central plateau and has one of the most unique flavor profiles of any agave. This large agave takes between 7 and 10 years to reach maturity, and on average it takes about 16–19kg of agave to produce 1 liter of mezcal. The agave for this mezcal are cooked for 48 hours in a traditional clay oven, and then milled and fermented with naturally occurring airborne yeasts in ground level cement tanks for five days. The spirit is double distilled in a traditional onion head copper still. The unaged mezcal is then bottled at 45.1% ABV.

About Mezcal

Mezcal is a distilled spirit made from roasted agave plants between two days and two weeks, which gives it a distinct smokey flavor.
What scotch is for whisk(e)y, mezcal is for tequila.

It can be made from different types of agave in different parts of Mexico, but most of it (60%) comes from the state of Oaxaca. Mezcal offers a large diversity of flavor profiles and ranges between 40 and 55% ABV.
