Pearse Lyons Whiskey pays homage to Dr. T. Pearse Lyons, an Irish master distiller who eventually founded Alltech Distilling Company in Lexington, Kentucky. Lyons, who received a Ph.D. in yeast fermentation, has whiskey in his blood: five generations of coopers hail from the Lyons' family and Lyons own son received his Ph.D. in brewing and distilling in Scotland.
This Irish Whiskey is a malt grain blend that was first aged in bourbon casks and then re-casked into first fill sherry barrels. This has a big wood and sherry influence. On the nose you’ll find, dried orange, pineapple, and lemon peel to start followed by mellow coffee, chocolate biscuit and a hint of gingerbread. The palate has a big dried fruit and oak char palate initially which develops into raisins, juicy citrus, vanilla, and red apple. Pearse Cooper’s Select has a finish of honeyed gingerbread, sweet stewed pineapple, apricot, and oak spice.

About Irish Whiskey
Contrary to popular belief that Scots invented whisk(e)y, Irish whiskey was mentioned almost a century before its Scottish brother.
Its origin comes from the perfume distilling monks who decided to tweak the recipe a bit, creating Irish whiskey.
Irish whiskey doesn’t have a lot of rules and regulations to be considered “pure” and can be made with various grains and processes, as long as it is aged for at least three years in wooden casks and has a max ABV of 94.8%.
