Saint James Agricole Paille Rhum holds the AOC (appellation d'origine contrôlée ― controlled designation of origin) certification, meaning that it is crafted by fermenting pure cane juice from locally-grown sugarcane. It is then distilled on Creole columns and bottled without any sweetening agents at 80 proof, after the Rhum has spent at least 2 months in oak casks. The expression is smooth, sweet, and fragrant with notes of vanilla, honey, and licorice.

About Rum
Rum history allegedly started in the Carribiens in the 17th century when they started to ferment and distill molasses, a byproduct of sugar production. Most of the Rum is aged in oak or ex-wine casks, giving its color and flavor.
We distinguish between 4 different Rum categories, where white or unaged rum is mainly used in cocktails, while dark, spiced, and añejo (aged) rum are mostly enjoyed neat.
The straw-golden Rhum leads with fragrant aromas of dried fruit, honey, licorice, vanilla, and a touch of wood. The palate is balanced and pleasantly sweet with fruity and woody notes that linger through the finish.
