At their 5,200 square-foot distillery, Little and Galyean combine traditional distillation techniques with state-of-the-art equipment to produce remarkable spirits that are bold, complex, and perfectly balanced.
"Any distillery in the United States should be a feather in the cap of the local community," explains John Little. "We buy almost all of our grains locally. Our waste goes to a local farmer. As American as the bald eagle, rye whiskey was first brewed in the American Northeast in the 1600s. Even George Washington distilled it after leaving the Oval Office, so there’s no way of denying its origin. It’s distinguished from bourbon for its original and unique spicy notes.
By law, rye whiskey must be made from at least 51% rye grain, aged in new and charred oak barrels for at least two years, and bottled at no more than 62,5% ABV.
The nose is sweet with spice, oak, brown sugar, caramel, and black tea. The palate is pleasantly sweet with toffee, herbal undertones, and toasted oak, culminating in a long finish with a balance of sweetness and spice.
