About Tipperary Knockmealdowns Single Malt Irish Whiskey
Founded in 2016 by Jennifer Nickerson, Stuart Nickerson, and Liam Ahearn. Tipperary Boutique is a new (distillery) in the Golden Vale, a storybook region in Southwestern Ireland, encompassing the counties of Limerick, Tipperary, and Cork. Nestled in the picturesque Golden Vale in Ireland, Tipperary Boutique crafts their whiskeys from their own barley, grown on Ballindoney farm in County Tipperary.
Though work on their distillery is still underway, Tipperary sources their mature spirit from distilleries in Ireland. These casks go into the expression of their current lineup the IWSC award-winning Rising, Knockmealdowns and Watershed. Handcrafted in small batches, this boutique Irish Whiskey is a hand selection of only six casks, matured in Ireland for 10 years in ex-bourbon barrels. The whiskey is cut to 47% with water from Ballindoney farm in Tipperary. This Irish gem has signature notes of fruit, sweet toasted sugar, caramel, and herbal notes.

About Tipperary
Tipperary Boutique Distillery is a joint venture of a whiskey expert, a chartered accountant and tax advisor, and a farmer. Stuart Nickerson, his daughter Jennifer Nickerson, and her partner Liam Ahearn founded Tipperary Boutique Distillery Limited in 2014, determined to make spectacular Irish Whiskey. The company spent the first few years releasing independently bottled single malt Irish whiskeys, while getting ready to produce their homegrown, single estate single malt Irish whiskey. Their distillery, which was built in 2020 at the Ballindoney Farm outside Clonmel, was the first distillery to open in County Tipperary in more than 150 years. For over 200 years, Liam’s family has been growing crops at the Ballindoney Farm, which lies on a plain of land sheltered by the Galtee, Knockmealdowns and Comeragh mountains, an area renowned for the richness of its soil and the purity of its water – perfect conditions for making whiskey.
Tipperary Boutique Distillery’s premium single malt Irish whiskeys are made using only the best Irish barley, and purest water from the mountains. Liam is responsible for the home-grown raw ingredients for their premium whiskeys, carrying on the family tradition of growing crops at the heart of Ireland’s famous Golden Vale. Stuart brought over 40 years of experience in the whiskey industry to the table, having worked at and managed a number of renowned Scottish distilleries. He advises on the fermentation and distillation processes, wood choice, and maturation decisions. Jennifer took on the role of the managing director, overseeing the daily management of distillery.
About Irish Whiskey
Contrary to popular belief that Scots invented whisk(e)y, Irish whiskey was mentioned almost a century before its Scottish brother.
Its origin comes from the perfume distilling monks who decided to tweak the recipe a bit, creating Irish whiskey.
Irish whiskey doesn’t have a lot of rules and regulations to be considered “pure” and can be made with various grains and processes, as long as it is aged for at least three years in wooden casks and has a max ABV of 94.8%.
