The first distillery to use milk permeate as the source of sugar, Dairy Distillery employs a proprietary yeast strain during fermentation. Vodkow is triple-distilled on German Christian Carl hybrid stills and diluted with pristine spring water from Lanark Pure Springs. Before bottling, the spirit is filtered through activated carbon, removing impurities. Vodkow Cream Liqueur is based on their unique Vodkow Vodka. Fresh lactose-free Canadian cream that comes from small Ontario dairy farms is added, resulting in a lactose and gluten-free liqueur that's bottled at 34 proof. About Vodkow
Community, environment, and innovation are at the core of Dairy Distillery, a Canadian distillery in the town of Almonte that brings together artisanal techniques and science while supporting dairy farmers and reducing waste. Lactose (milk sugar) is natural and healthy, producing a clean, smooth, and gluten-free spirit. The reason we see it used so rarely has to do with higher cost and various other challenges that Dairy Distillery has taken head-on.
Thousands of dairy farms in Ontario send their milk to be processed. Milk permeate is a sugar-rich liquid and the byproduct of butter, cheese, and yogurt production. It's mostly dumped, while dairy farmers get stuck with the bill. Dairy Distillery has tackled this problem by converting the milk permeate into spirit, supporting local farmers and the environment. The entire operation has only half the carbon footprint of conventional distilleries that rely on grains, corn, or potatoes as their source of sugar.
This typical aperitif has its origins in 13th century Italy where it was used for medicinal purposes. The liqueur is produced worldwide and can have all sorts of flavor profiles, from fruit, spices, nuts, and even cream, and has a low proof of 15 to 30% ABV.
